No-Cook Summer Supper: Sesame Chicken & Rice Salad

Summer brings warm weather and warm weather brings the need for easy-to-make dinners. The last thing you want to do when it’s hot outside is spend time inside cooking over a hot stove.

There is a lot that you can do with your microwave and some common foods and products sold at your typical supermarket. Here is one of my favorites.

Sesame Chicken & Rice Salad

Ingredients:
10 ounces frozen brown rice (i.e. Birds Eye Steamfresh), or 2 cups cooked brown rice
2 cups micro-cooked Asian-style frozen vegetables
2 green onions, white and part green, chopped
2 cups shredded or diced skinless chicken breast (leftover grilled chicken or bought     cooked from rotisserie or packaged cooked chicken)
1/3 cup lowfat Sesame Ginger salad dressing (i.e. Newman’s Own Lighten Up!)

Optional garnish: 1 teaspoon toasted sesame seeds or 1/8 cup toasted sliced or slivered almonds

Directions:
1. Microwave brown rice following directions on the package (such as microwave in package on HIGH for 3 minutes). Let rice cool while you lightly cook Asian vegetables following directions on package (such as add vegetables to covered microwave-safe dish and microwave on HIGH for 2 minutes or until crisp-tender.
2. Add rice and vegetables to a medium serving bowl and toss with green onions, chicken and sesame ginger dressing.
3. Spoon into serving dishes and sprinkle toasted sesame seeds or sliced almonds over the top if desired. Enjoy!

Yield: Makes 4 servings

Per serving: 308 calories, 27 g protein, 35 g carbohydrate, 5.5 g fat, .9 g saturated fat, 2.5 g monounsaturated fat, 2 g polyunsaturated fat, 59 mg cholesterol, 4 g fiber, 440 mg sodium. Calories from fat: 16 percent. Omega-3 fatty acids = .3 grams, Omega-6 fatty acids = 1.7 grams.

4 Health and Fitness Tips, For You!

The US has seen a massive increase in the amount of people considered obese or overweight by the medical community. It is now more and more commonly known as an obesity epidemic. We find ourselves being battered by pharmaceutical companies selling  “quick fix” pills, powders, and lotions that do nothing to actually help people take the fat off and keep it off. Of course the same can be said of the diet industry as well. There are so many different diets going around now you could pick one a month and in a years time still have more to choose from.

What is really needed are some sensible proven weight loss tips that people can implement no matter what their present physical condition is. That said let’s dive right in.

#1  Drink more water- All too often Americans are borderline dehydrated, so they end up eating when they are actually just thirsty, and they aren’t getting enough water so their bodies are working on the water starvation reflex and not flushing the toxins and junk out.

#2  Eat more often- I bet you thought I was going to say eat less. While it is true that to lose weight you need to eat less calories than you expend…you need to eat more often to get the metabolic furnace stoked up and burning right. Get it out of starvation mode. So start the day off with breakfast. Even an instant breakfast drink and a piece of fruit as we head out the door in the morning. Eat less calories. Eat more often. Don’t get hungry, your body wont win against hunger, avoid being hungry by eating small calories often.

#3  Move more- You need to be moving more. Use the stairs rather than the elevator, park farther out from the office or the store, go for a walk around the block, go dancing, play with your kids. Make it fun. Running is not the only way to burn more calories. Do SOMETHING. And if you can then pick up a good workout routine.

#4  Finally, determine  your “Why”- Decide why you want to discard fat. Make your reason big enough to motivate you through the slumps that invariably happen. Have enough “whys” that you will be able to pull from like a deck of cards, or an ammunition pack. If one doesn’t work to get you motivated one day, then move to the next one, until you find the reason that will motivate you.

Personally my reason when I first started were, to get healthy, live longer, look better, prove to myself I could, prove to others I could, be an inspiration, to feel better about myself.

Aging is a very complex process that involves many areas of your body. It’s unlikely that any one product or pill could cure all of the ailments of aging. However, there are  some things that you can do, not only to help you age more slowly, but to improve your quality of life. Your best bet for a long and healthy life is to:

1. Eat a varied and healthy diet. Include plenty of fruits, vegetables and whole grain foods. Fiber, calcium, iron, magnesium, and vitamins all play a part in keeping your body functioning at its best. Drink lots of fluids to maintain healthy skin and flush out waste. Eating right will help you maintain a healthy weight.

2. Exercise every day. Exercise improves appetite, makes healthy bones, gives you a better emotional outlook and improves digestion and circulation. Exercise makes you stronger and helps you lose weight.

3. Seeking prompt medical care when you’re ill or injured. Listen to your body and take care of any little problems before they become big problems. Get screened for diseases such as cancer and heart disease.

4. Use sunscreen to prevent sunburn. Professionals agree that one of the most significant factors contributing to aging is chronic inflammation of the skin.

5. Quit smoking and avoid secondhand smoke. Smoking has very damaging effects and dramatically increases your risk of getting cancer and heart disease.

6. Manage stress. Stress is a part of everyday life. Develop ways to help you cope and adjust to situations in your life that may cause you stress. The situation isn’t the problem, its how you react to it.

7. Look for ways to improve overall well-being and enthusiasm for life. Be curios and creative which will encourage you to learn new things. You can also use humor and laughter to help you age well and live long.

8. Keep strong relationships. Maintaining close ties to your family and friends are crucial to healthy aging.

9. Don’t let fears and worries dominate your life. A worried mind is not at peace and robs you of zest and energy which you need to maintain youthfulness.

10. Keep cells youthful with antioxidants. Antioxidants are found in a full-range of fruits and vegetables, as well as in some meat, like fish. Although, our bodies produce its own antioxidants, the level of product declines over time because of environmental factors and through the aging process. You can also take anti oxidant supplements or even anti oxidant teas.

Be proactive. Your health should be one of the most important things to you. You spend time investing in things in your life, your hobbies and activities. Take some time for the most important thing. If you want to be around for a while, start practicing things that will help you to stick around even longer.
